Chocolate NYC style Cookies

Super indulgent and chunky, these cookies are delicious and look really impressive. You could swap some of the Chocolate to include fudge pieces or mini marshmallows.

You will need:
120g Unsalted Butter
175g Light Brown Sugar
1 Egg
1 tsp Vanilla Extract
250g Plain Flour
40g Cocoa Powder
1 tsp Baking Powder
½ tsp Bicarbonate Of Soda
½ tsp Sea Salt (optional)
300g Chocolate Chips (made up from Milk, Dark & White Chocolate as you wish)

What to do:
Preheat your oven to 170°C Fan/ 190°C and pop a sheet of baking paper onto two baking sheets.

In a large bowl, beat Butter and Sugar together until thick and creamy.

Add the Egg and Vanilla Extract and mix to combine. The mixture will look a little curdled until you begin to add Flour.

Add in the Plain Flour, Cocoa Powder, Baking Powder and Bicarbonate of Soda (and Salt if using) and fold until just combined.

Stir through the Chocolate Chips.

You want to only get about 8 cookies from the mixture! So, divide the mixture into balls and place them into the freezer for about 30 minutes.

Place four balls onto each of the prepared baking sheets.

Bake in the preheated oven for about 14 minutes.
Leave to cool for about 20 minutes.
