I really love my collection of easy – and quick to prepare – cakes and bakes recipes. Sometimes, you don’t have the time to follow a fancy recipe and this is one of my fruit cake recipes for just such an occasion.
As always, its adaptable so if you don’t have brown sugar you can use caster sugar. And feel free to use any mix of dried fruit you have in your cupboard. Maybe you have a bag of mixed dried fruit leftover from Christmas. My kids always loved sultanas so sometimes I’ll just use those and the recipe works just as well.
You will need:
175g Margarine
150g Soft Brown Sugar
2 Large Eggs
175g Self Raising Flour
175g Dried Mixed Fruit
1 tsp. Mixed Spice
2 tsp Orange Juice (optional)
What to do:
Grease and line a loaf tin with baking paper. Preheat the oven to 160 °C (Fan 140 °)
In a large mixing bowl mix the Margarine and Brown Sugar together until well mixed and creamy.
Stir the Mixed Spice into the Flour.
Add in the Egg, followed by the Spiced Flour– a spoonful at a time – to help combine the mix.
Once all the Flour has been added, stir in the Dried Fruit and the Orange Juice (if using).
Spoon the mixture into the prepared loaf tin and level the mix slightly. It will self-level in the oven so no need to spend too much time on this.
Bake for 50-60
minutes until a skewer/knife inserted into the cake comes out of the cake clean.
Leave in the tin to cool.
