We’ve all had those times when our bananas are getting a bit too ripe to eat – so here’s a quick and easy recipe to use them up in a delicious loaf.

As usual you can add extra treats to the recipe – chocolate chips or blueberries are amazing additions! Or leave the loaf plain for a banana delight!

You will need:

100g Margarine

100g Sugar – whatever type of sugar you have is fine

2 Eggs

2 Bananas

225g Self Raising Flour

Optional – Handful of Blueberries or Chocolate Chips

You will also need a loaf tin.

What to do:

In a small bowl mash the Bananas with a fork.

Crack the Eggs into another small bowl and beat gently.

Cream the Margarine and Sugar together in a large bowl until pale and smooth.

Add the beaten Egg and mix until combined.

Stir in the Bananas.

Fold in the Flour gradually.

If using, add the Blueberries or Chocolate Chips.

Grease your loaf tin with a bit of margarine – you can add a strip of baking paper if you like..

Tip the mix into the tin and level off a little with a spoon.

Bake at 175° Fan (185°) for 30 minutes.

When baked, remove from oven and allow to cool, then cut into slices.
